Pumpkin Spice Whoopie Pies

Nothing says Fall like Pumpkin Spice, and we've got an easy way to add a little spice to your life with these Pumpkin Spice Whoopie Pies (or Gobs, as they're known in our neck of the woods).  Make a batch to eat now and freeze a few for a future indulgence.


2 c brown sugar
1 c vegetable oil
1 1/2 c cooked, mashed pumpkin
2 eggs
3 c flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla extract
1/2 c walnuts, chopped (optional)
1 Jar Bumbleberry Farms Pumpkin Spice Honey Cream Spread (Seasonal)


1. Cream Brown Sugar and Oil.


2. Add pumpkin and eggs. Add flour, salt, baking powder, baking soda, vanilla. Mix well.


3. Drop by heaping teaspoons onto greased cookie sheet. Bake at 350 degrees for 10-12 minutes.


4. Make sandwiches from 2 cookies filled with Bumbleberry Farms Pumpkin Spice Honey Cream Spread.

Pumpkin Spice Whoopie Pies will have them shouting "Whoooo-pie"!

Variation:  Kick it the spice a notch by adding the following to the cookie batter:  1 1/2 T cinnamon, 1/2 T ginger, and 1/2 T ground cloves.
