Ingredients1 lb. salmon
1/2 c. reduced sodium soy sauce
juice from 1/2 lemon
2 cloves garlic,
minced 1 tsp. fresh ginger, minced
1 T. BumbleBerry Farm Sweet Maple Honey Cream
In small bowl, add marinade ingredients and whisk until blended. Place salmon in a large zip lock bag and add marinade, coating fish. Marinate for at least one hour. Preheat oven to 400°. Place fish, skin side down, on a foil-lined baking sheet, and drizzle with additional marinade. Bake for 15-20 minutes until fish is flaky. If you'd like, broil the fish during the final minute of baking to help caramelize the marinade.
Suggestion: Serve on a bed of quinoa or couscous with wilted greens.
