During Pennsylvania summers, we can't wait for the first tomato to ripen the vine. These simple little Heirloom Tomato, Honey and Brie toasts celebrate the best of our gardens, making a perfect adornment to any meal or as a stand-alone snack!
INGREDIENTS
1 Crusty loaf of French
1 Wheel of brie cheese
Olive oil to drizzle
Salt
Pepper
Fresh thyme
Colorful heirloom tomatoes, thinly sliced
Bumbleberry Farms Pure Clover Honey, Raspberry Blossom Honey, or Honey Straws
INSTRUCTIONS
Preheat oven to 350 degrees F.
Slice bread diagonally into 1/2" slices, then spread tops of each side with olive oil. Place on baking sheet and bake for approximately 5-10 minutes until toast is slightly browned. Remove from oven.
While still warm, slather each toast with brie cheese. Place sliced tomatoes on top. Drizzle with honey and additional olive oil. Sprinkle toast with salt, pepper, and thyme leaves to taste.
Return to over for an additional 3-5 minutes, until cheese has melted and toasts are golden brown. Serve whole or sliced in half as an appetizer or snack.
